Sugar-Free for Six Plus Years
If you haven’t yet read my full story on how I healed my autoimmune system, my thyroid using food you can check that out here. This is why I am so passionate about cooking Sugar-Free – Gluten Free – Dairy Free!
I truly believe that food as medicine or food is poison, it all depends on the food you’re eating.
Like most other Americans grew up eating the typical Standard American Diet, SAD. Yes, that’s actually the acronym for it (pretty much says it all right?). It wasn’t until having my youngest son all of the symptoms I have been feeling oh, they have been accumulating over the years, finally were too much!
I’m looking for how to heal my thyroid naturally, one of the first places I started was food. Eliminating things like gluten, dairy, and other highly inflammatory foods gave my body enough rest that it can begin to heal itself.
That is over 6 years ago now and I haven’t had processed sugar since.
I eliminated sugar from my then 12 and 9-year-olds diet as well.
By this point, I had already perfected keto, sugar-free, low-carb desserts, and for the most part that is what they were eating anyway. It is actually much easier to eliminate foods from your kid’s diet if they’ve seen you eliminate them and heal your own health.
I did this primarily because at this point learning all that I had learned to heal my body how could I continue to let my children eat poison?
What I didn’t expect to happen was to my 12-year-old is within two months of eliminating gluten, dairy, and sugar lost close to 19 lb!!!
19 pounds!!
Two months after that (four months into eliminating those 3 foods) he also had a massive growth spurt. Going from about 5’4 to 5’8 upon turning 13 years old.
He had always been on the thicker side, baby chub I would call it. Eliminating these Foods was not in any way a weight loss plan. I want the best health for our family. My husband and I were already following this clean eating lifestyle but something in me felt like fully bringing our kids in with us….. I don’t know if I felt they would “miss out” in some way or I was just doubting myself and if I could do it.
Either way Fear was what stopped me for so many years from transitioning all of us to a clean healthy lifestyle eliminating toxic foods.
He also had things like night sweats. His ears would get extremely hot and uncomfortable. He had little red bumps all over his face and behind his arms. So many little things that I never connected the dots back to being food-related.
Here is How to make Keto Pecan Pie Bars

Lily’s sugar-free chocolate chips or Lily’s sugar-free caramel chocolate chips to this recipe. For all you chocolate lovers feel free to add those and I’ve also noted that in the recipe card. You are the artist in the kitchen don’t feel like you need to follow the rules. I have often prepared this recipe by using half the bars chocolate chip and the other half caramel chocolate chip.
Variety is one of the best flavors in life.
This recipe also pairs very well with my sugar-free coconut cream ice cream. I have several versions of this ice cream as well but my favorite is the vanilla butter pecan. (Find that recipe here)
I mean who doesn’t love butter pecan ice cream with pecan pie?!?!
Step-by-Step Keto Pecan Pie Bars
- Prepare the crust. I prefer to use the food processor to give the crust a shortbread like consistency. But you can use your hands or a pastry cutter just as easily.
- Pre bake the crust. Be sure to add parchment paper or grease your pan prior to adding the crust. We are not fully baking the crust on this step, we just want to see those beautiful golden edges
- Make the pecan pie syrup. Melt the butter and sweetener together oh, you will get a caramel like mixture to replace the corn syrup in traditional Pecan pie recipes. It’s easy it’s quick and it gives you that gooey pecan pie texture.
- Whisk in the cream and eggs. be sure to add these off the heat slowly while whisking constantly so your eggs don’t curdle.
- Make your pecans and chocolate chips. I like to sprinkle these over the cool crust to make sure there’s a nice even distribution then pour the syrup over that.
- Pour the Syrup over the top.
- Until just barely set. You can give your pan a little jiggle to see if it wobbles in the center a tiny bit of wobble means they’re still gooey
- Let it Cool. Yes this is one of the hardest steps but it is key to being able to cleanly cut through your pecan pie bars.
- Enjoy! (pssst don’t forget to check out this delicious Keto Sugar Free Ice Cream that would “top off” (hehe pun intended) these Gooey Pecan Pie Bars beautifully)
There is much more filling than crust (which I prefer).
These bars were also jazzed up with keto candied pecans on top & I decided to make the syrup chocolate vs having added chocolate chips. You see you are the artist have fun with the recipe use it as your base then have fun and play around.

Food storage information for these Keto pecan pie bars
And totally keep these gooey keto pecan pie bars on the countertop for 2 to 3 days without any problems. However, I like to keep mine in a covered container in the refrigerator where they last 4-6 days.
If I am being honest ours never seem to last more than 2 days (lol so good luck with the “up to 6 days”) I’ve also heard that they freeze well.
Again we are so quickly that I’ve never had a chance to try freezing it.
