Being Gluten-Free for over six years we have tested a LOT of pancake recipes! Some were ok, some not so much but none that really hit the spot ya know. That is until we found this Paleo Pancake recipe and our search for the best gluten-free, dairy-free, and sugar-free pancakes has finally come to an end.
In the process of healing my autoimmune system after having our youngest son, I found one simple but profound truth – Food is Medicine or it is Poison.
The food we are eating is either healing & nourishing us or slowly killing us. There really is no grey area.
One of the first things I eliminated in my healing journey was Gluten and Sugar. People are often dumbfounded to hear my husband and I have not eaten sugar in over 6 years, and for our 13-year-old and 10-year-old sons, it has been over a year with no processed sugar, gluten, or dairy in their diets.
Food is Medicine
Hi, there friend. If we have not met yet my name is K’Lee. Mom of three boys and self-healed enthusiast. As I would hear with so many stories over the years in researching How to Heal My Autoimmune System we all had one thing in common.
Some sort of sickness or element we wanted to heal naturally.
I hope you have no experience with needing to heal your autoimmune system, for me it was my thyroid. But if you have then you can relate when I say I spend two years (and hundreds of dollars) hoping that the doctors and specialists could heal my thyroid.
Instead, all I received was, “sorry this is not something that can be healed you will be on medication the rest of your life and we can help you “manage” this”.
This was when I realized if I want to live on this bandaid we like to call medication for the rest of my life and never look or feel the same then I should just listen to the doctors and resign all hope for healing. Obviously, this was not an option for me.
I, like hundreds of thousands of others before me, decided to say screw that we will find our own answers. (LOL)
And that my friend is exactly what I did, and why you are reading this now. Because finding these answers took me starting my own education in health and wellness.
I share here on this blog how I used food and clean non-toxic living to heal my body.

The Best Paleo Pancakes

The full recipe is posted below, but before you hop down there let me share with you some of our must-try Pancake toppings!
Paleo Pancake Toppings
Strawberry Chia Seed Jam
This homemade jam not only tastes better than store-bought jam, BUT IT IS SUGAR-FREE!!
Here is how to make it:
Place 2 Cups of Frozen Strawberries (into a pan on medium heat)
Add to that:
3 Tbsp Water
2 Tbsp Monkfruit sweetener or Honey
1 Tbsp Lemon juice (or 4 drops Young Living Lemon Essential Oil -Note NOT all essential oils are safe for ingestion to be sure to do your research if you are using anything other than Young Living)
Bring to a light boil and simmer for about 5 minutes. Remove from heat and with a blender or hand emulsifier mixer and blend the mixture down to a jam.
Then add 1 Tbsp Chia Seeds and allow to cool before eating.
This jam will store in the fridge for about 7-10 days.
Health Benefits of Chia Seeds – these amazing superfoods are high in antioxidants & fiber (aids in digestion), are a great source of added protein, and have been studied to lower high blood pressure and reduce risks of heart disease.
Peanut Butter, Banana, and Chocolate Chips
These are known in our house as the birthday pancake. Even when I am asking what I should make for dessert I will hear, “can we have the birthday pancakes?” (lol) These are for sure a sweet treat almost everyone loves!
No recipe is needed for these.
Add Organic Peanut Butter, Organic Bananas, and some Lilly’s Sugar-Free Chocolate Chips to a pile of delicious Paleo Pancakes. (I linked the ones I get below and if it is fall time and you are a pumpkin everything lover like I am try the white chocolate pumpkin ones they are so good!)
The Best Paleo Pancakes
We have been Gluten-Free for over 6 years. That has given me a lot of time to test pancake recipis. Some were good, some were just ok, and some were complete no goes. These paleo pancakes have finally ended my search for a yummy gluten free pancake recipe.
- 1 1/3 cup tapioca flour
- 3 cups almond flour
- 2 tsp baking soda
- 1 tsp sea salt
- 1 cup unsweetened almond or coconut milk
- 1/4 cup honey (or 1/2 cup monk fruit sweetener)
- 1 tbsp apple cider vinegar (you cant taste it – don’t skip it will activate the baking soda to rise without flour or yeast)
- 1 tsp vanilla extract
- 1 cup blueberries (optional)
The amazing thing about this recipe is it is the perfect base recipe with limitless possibilities. We have even eaten it as a dessert with strawberries and dairy-free whipped cream as a Strawberry Shortcake. This recipe can also easily be pop it in a baking dish or on a lined baking tray if you’re in a rush.
Add all the ingredients to a bowl or blender and mix well (note: if you are adding berries do not blend them add them at the end).
We prepare ours on a cast-iron skillet. Not only does food cook more evenly and the cast-iron lasts a lifetime – there are NO chemicals leaching into your food!! (I’ve linked the one we use below)
Mom Pro-tip: is this makes a generous batch size, my kiddos love to make them in the mornings themselves, so we store the batter in the fridge in a pancake (stainless steel one we like linked below).
