When I say these are THE BEST Paleo Chocolate Chip Cookies this comes from 6 + years of no gluten, no dairy, and no sugar. Let’s just say I have tried a lot of cookie recipes in search for that one that really hits the spot (you know the one the sugar packed gluten ones hit lol)
There are a LOT of Paleo and Keto cookie recipes out there. I know I have tried many of them. Some good, some ok, some…. well edible. But it wasn’t until I tried the recipe I am sharing with you today that my search for the best low carb (ish), paleo cookie has finally come to an end.
Why to cut the gluten and sugar
I simply love sharing low carb, keto, paleo dessert recipes. It’s probably because for 1 I have a sweet tooth like any woman, and 4 to when I started keto over 6 years ago I went cold turkey cutting out all sugar and gluten with no real replacement plan.
That detox time was a rough!
And I didn’t realize at the time there was a better way. The internet wasn’t what it is today so luckily for you if you’re cutting out gluten and sugar just following this blog alone makes it super easy.
When I share I usually label it keto or paleo but in all honesty I stopped following a strict “diet“ and just started eating simple, clean, organic, natural, whole foods.
I like to call it the “human diet” (lol) original right?
But if we think back to foods our ancestors ate for thousands of years then we know what kind of foods will nourish our bodies and provide us longevity. The ability to age gracefully.
We can see the health pandemic and diseases in the US caused from following the SAD – Standard American Diet (Coincidence in the acronym I think not).
It is estimated that 1 in 8 Americans will die of one of the “Big 5 Killers”
- Alzheimer’s
- Obesity
- Cancer
- Heart disease
- Blood pressure related disease
One in eight people YIKES!
When it comes to food I love how Dr Mark Hyman puts it, “Food is either medicine or poison. It is either nourishing and healing your body or slowly poisoning it.”
There are four foods to avoid that are easily linked to illnesses
- Gluten
- Dairy
- Sugar
- Seed Oils
Without going into detail in all of these because this is after all a chocolate chip cookie recipe. Just know that if you’re suffering from any kind of illness, and issues, and even issues mentally such as depression and anxiety these three foods are often linked to causing or worsening health issues.

The BEST Paleo Chocolate Chip Cookie Recipe
If you happen to be new to baking gluten-free and sugar-free there’s a couple of things that are key in making or breaking a great recipe.
1) is the texture
2) is there an aftertaste.
I tried mini low carb or paleo recipes in my baking the last 6 years and though it tasted delicious it looked horrible and the texture just fell apart. This wasn’t always a deal-breaker in my recipes I would still continue to revisit the ones we really enjoyed.
However, I started to play around with the texture because we eat with more than just our sense of taste.
This recipe holds together just like a chocolate chip cookie should. It has no weird aftertaste. A lot of time is caused by stevia. You are just left with a gooey delicious guilt-free chocolate chip cookie.
Here’s what you’ll need for the recipe:
- Butter or Ghee (Paleo version)
- Monk fruit Sweetener
- Vanilla extract
- Egg
- Almond flour
- Tapioca (or Arrow Root) flour
- Baking soda
- Paleo/ keto friendly chocolate chips (Lillys is our favorite)
- Pecans (optional but my favorite way to eat these cookies)
There is also two ways to prepare this recipe
- The good old fashion cookie way
- The sheet pan “pazookie” cookie method (great if your in a hurry or feeding a large group)
Preheat your oven to 350° (177° C)
Line a sheet pan with parchment paper and mix all the ingredients well. Start with your dry ingredients and then mix in your wet ingredients until well combined. Add your chocolate chips and if you are feeling a little extra that day we love adding pecans to this recipe as well!
Couple of notes.
This recipe freezes amazingly and is a great paleo chocolate chip cookie dough for paleo ice cream. If the idea of a raw egg bothers you for the cookie dough simply leave it out or edit 1 tbls of chia sees soaked for 5 minutes in 2 tbls of water for a binding agent.
I love my cookies hot and fresh so this batch makes our family of 4 three nights of cookies. I make 4 cookies them refrigerate the rest for the next couple of days to bake them fresh.

The Best Paleo Chocolate Chip Cookies
Ater six plus years off sugar and gluten and many many cookie recipes in hunt for that one that does it….hits the spot (you know the spot the one those sugar and gluten filled cookies hit). Well friend I found it, I finally found it. This is sure to be one of your go-to paleo cookie recipes
- 2/3 cup butter or ghee (paleo version)
- 3/4 cup monkfruit sweetener
- 1 tsp vanilla extract (be sure it says extract not "imitation")
- 1 large egg (optional chia seeds see instructions)
- 2 1/4 cup almond flour
- 1/2 cup tapioca flour (or arrow root flour)
- 1/2 tsp baking soda
- 1 cup Lilly's Chocolate Chips (or Paleo / Keto friendly)
Preheat the oven to 350° (177° C)
Line a sheet pan with parchment paper and mix all the ingredients well.
Start with your dry ingredients and then mix in your wet ingredients until well combined.
Note: if you are swapping the egg for a chia see “egg” for the cookie dough option simply put 1 tsp chia seeds and 2 tsp water aside for about 5 minutes then mix with the addition of the wet ingredients.
Add your chocolate chips and if you are feeling a little extra that day we love adding pecans to this recipe as well!
Bake for 8-10 minutes for the traditional style cookie
Bake for 10-12 minutes in a 9X12 for the Pazookie style sheet pan cookie
