These have to be the EASIEST tortillas anyone can ever make! They are literally ready in 5 minutes and use 3 base ingredients. They are Paleo, Grain-Free, Dairy-Free, and Gluten-Free! You will not believe how soft and flexible these tortillas are. They could totally be used as a Gluten-Free flat-bread too!
Anytime we think clean eating most of us have released that means cooking at home. Eating out we know offers only the cheapest food, and who knows how it is being cooked (or in what). But eating clean and at home does not mean spending all night in the kitchen.
Take these easy Gluten-Free, Grain-Free, Paleo Tortillas.
The base for these little beauties only uses a couple of ingredients! Water. Tapioca Flour. Coconut Flour. However, you will find optional added salt and a couple of eggs in my recipe along with seasonings of your choice (like adding garlic powder for Mexican Taco night).
Though these are optional and not required the added 2 ingredients are our family’s favorite way to enjoy these yummy Paleo Tortillas, heck they could even be considered flatbread.
One Recipe Base Loads of Possiblites
I am not sure which I love more. No rolling out dough and pressing that traditional tortillas require. Or how absolutely versatile these yummy Gluten-Free Paleo Tortillas are!
Can I go with both?
Being from the South (Texas) and married to a Mexican/El Salvidorian I have grown up around home-maid tortillas. And though I remember them as delicious – side note I have not eaten gluten in over 7 years at the time of writing this post.
Home-maid tortillas took FOREVER to make, and lots of burned fingers later (true Mexicans only flip with their fingers) they were typically gone quicker than we could pump them out.
These tortillas come together and depending on how big of a batch you are making are ready in 5-10 minutes! Yes! I am serious.
Tapioca Flour
The base ingredient for these magically easy tortillas (or flatbread) is Tapioca Flour. This may not be something everyone has in their pantry – unless you are Brazilian or have been Paleo for a little while now. Tapioca Flour is a starch extracted from the storage roots of the cassava plant.
It is different than cassava flour.
Cassava is a root vegetable similar to a potato and widely grown in Brazil. Cassava is such an amazing root vegetable that it is now widely grown in most South American countries.

The combination of coconut and tapioca flour helps to create that soft, fluffy, familiar texture found in flour tortillas. I personally think these paleo tortillas are somewhere between a tortilla and flat-bread.
If you have ever eaten Brazilian food (which is one of my favorite foods) then you have had poa de queso – Brazilian cheese bread.
We do not eat dairy anymore either, if you are Paleo then you are with us. Stay tuned as I am still working on a “dupe” for the Poa De Queso. But for now, these yummy tortillas will hit the spot.
How We Love to Eat Paleo Tortillas
So, at the beginning of the blog post, I said this was a great “base recipe”. What I meant was this recipe can go SO many ways. By adding some garlic powder and a little jalapeno juice you have yummy Mexican flavor tortillas.
Add a little garlic and curry flavors and you have a delicious Paleo Naan flatbread.
By adding some butter, cinnamon, and sugar and you have churro-style tortillas which have been my favorite since I was a child. Or just keep plain (only salt) and use them as sandwich wraps or breakfast burritos!
They freeze well and are so quick to whip up you could make them even in a time crunch.
How to Make Paleo Tortillas
It cannot be easier! First, let’s grab all for the base ingredients:
- Eggs (optional)
- Water
- Tapioca Flour
- Coconut Flour
- salt
Now, simply whisk them together. That’s it! You are almost done already.
Last step, in a hot cast-iron skillet (if you are using non-stick PLEASE google health risks in non-stick pans and through that pan in the garbage!) Cast Iron pans will last you your whole life if you properly care for and clean them. They cook more evenly than any other pans, and I love how they can go from stovetop to oven making one-pot meals even easier with less clean-up!
To Freeze these Paleo Tortillas simply line the middle of each tortilla with parchment paper and place them in a freezer bag. To have them later let them thaw in the fridge overnight and they will be ready for breakfast or dinner the following day!
Simply pat them dry and reheat them in a hot cast-iron skillet with a splash of avocado oil to warm them up.

The Easiest and Best Paleo Tortillas Ever
- Eggs
- 2 Large Eggs
- 2/3 Cup Water
- 1 Cup Tapioca Flour
- 1/4 Cup Coconut Flour
- 1/2 tsp salt
- 1 tbsp Butter, Avacodo oil, or Ghee for frying (optional)
Mix the base ingredients together add any additional seasonings example: garlic powder, cilantro, jalapenos for Mexican Paleo Tortillas. Garma Masala and Garlic for Paleo Naan Bread. Or simply keep them as they are for everyday paleo flatbread/sandwich wrap style.
Get a cast-iron skillet hot. Once the pan is hot add avocado oil or butter then add about 1/2 cup of batter to the pan. Flip the batter after 2-3 minutes. Add butter or ghee for added buttery flavor and sprinkle a little salt while hot if desired.
